I went from a chilly Spring in Whistler to 90 degree (30 plus degrees Celsius) tropical Central America. I spent most of my time in San Juan Del Sur, Nicaragua's surf capital. San Juan had all the quintessential things you would expect a Central American surf town to have: bright colored buildings, $6 lobster dinners, psychedelic surf art, beautiful sunsets over the ocean, and an eclectic assortment of locals (much like Whistler).

I've got a guilty pleasure to tell you about.. Energy balls. I mean what's not to love about them? They're sweet, creamy (or crunchy), and give you that little energy BOOST. They keep my energy up on a busy day and I love that. These particular bars are also UNIQUE in flavor... I don't think I've ever seen a raspberry lemon energy bar or ball in the store. I just love pancakes. But I have to admit, they are something I rarely treat myself too. There are two reasons for this: 1) I hate feeling sluggish in the morning and 2) I'm gluten intolerant and refuse to consume highly-processed wheat substitutes (they're just not food in my opinion). As you may know, I love food. But as any of my friends will tell you, I love whipping up something delicious on the fly. Scruptious food does not need to suck your time nor does it need to be unhealthy. I stumbled upon this muffin recipe when I was a vegan (it shockingly has no butter, milk or eggs). It was such a simple and unusual recipe, I didn't believe it could actually produce muffins, let alone ones that tasted good. I can't tell you how mistaken I was! These muffins have become a staple in my baking. Primarily because they're absolutely delicious and secondly because they are so easy AND so healthy. They have no added sugar, no butter, and are gluten free? Take the leap of faith like I did and you will not be disappointed.
