It's that time of year again! Time for mouth-watering, food-gasm inducing, FARMERS MARKETS. Personally, I love few things more than paroozing a farmers market on a Sunday morning. I love knowing where my food comes from and that it was picked within the same week that I'm consuming it. I also love supporting local farmers. Farming without industrial chemicals and industrial scale equipment is HARD and I have a lot of respect for the people that grow my food. I also love the challenge of eating foods that are in season. It is pretty cool to buy a crazy looking pile of garlic spears (the tops of young garlic), take them home, and cook something you've never eaten before.
You also realize that mother nature's food doesn't always look perfect (check out the wild looking zucchinis above). Some vegetables look like mutant creatures, which I find cool. So say you buy a huge mutant (but organic) zucchini from the farmer's market and you barbeque half of it but are unsure what to do with the other half? I have just the solution! Flourless Zucchini Brownies. They are moist as can be and pretty darn healthy! Paleo, Dairy Free and Gluten Free. Did I mention they are delicious? Because they are. Okay I forgot to say a little something about Zucchini health properties and such. So if that's something that peaks your interest, here ya go.... Zucchinis are part of the summer squash family and are very high in their water and fiber content, making them very-low calorie. How low you ask? 17 calories per 100g. That's LOW. Zucchinis are a good source of potassium. Did you know potassium helps reduce blood pressure and aids in essential muscle functioning? It does. Lastly, zucchinis are rich in antioxidants such as carotenes, lutein, and zea-xanthin which help fight of free radicals. Free radicals play a role in aging and several diseases.
Flourless Farmer's Market Zucchini Brownies
Flourless, Paleo, Gluten Free, Dairy Free & Delicious!
Prep 15 mins | Bake 40-45 mins | 1 square baking pan
1.5 cups shredded zucchini
1 cup almond butter
1/3 cup honey
1/2 cup oil (coconut, grapeseed, butter or applesauce)
2 tsp. vanilla extract
1/4 cup cocoa powder
1 tsp. baking powder
1 cup dark chocolate chips**
3/4 cup chopped nuts
Preheat oven to 350 degrees F
For smooth, extra moist brownies, blend all ingredients (including dark chocolate chips) in a food processor. If you do not have a food processor or want visible zucchini bits, mix all ingredients in a mixing bowl except for the zucchini. And the zucchini and voila.
Add optional nuts to mixture
Pour mixture into aluminum foil covered (or well oiled) square baking dish
Bake for 40-45mins or until a knife comes out of the center clean.
Cool and enjoy!
